I've been informed that 'fresh fish' can be up to seven days old before it is sold. :-\ :-\
So fish that is immediately frozen (in house) aboard the fishing vessel that caught it, is fresher than fresh fish that is simply kept 'chilled' until it reaches land, sometimes days later. Then begins the long trip to the fishmonger or supermarket. :(

But also, it's not uncommon to buy fish from the "fresh fish" counter and find that the centre is still frozen ??? ???

I watched a progamme a while back about Billingsgate fish market.....it targeted one trader.....known iirc as 'the bastard of billingsgate' . He used to turn over £100k's of fish ever week.....but he got a visit by the fish inspector once......quite a bit of his fish in his chillers out back had to be binned coz they had a very fishy smell to them! So even in a fish market i'd say some of the fish was more than 7 days old!
You can usually tell how fresh a fish is by the eyes.....if the are dull/opaque then its on old fish and not very fresh ;)
