Interestingly (or not), I watched a programme the other week and I was shocked.

Potatoes, just like all fruit and Veg, have a season.  We all know that.  BUT, I didn't know that Potatoes are brought out of the ground, and stored in massive crates in massive warehouses in a controlled environment (temperature, humidity).  This puts the fruit/veg into a sleeping state - They don't want to grow, they don't want to seed etc etc.

Perfect if used very soon after being 'awaken'..... but they don't last long once they are awoken.

We used to buy 50KG sacks of spuds from a farm (big family).  Every meal was accompanied by chips, boiled potatoes or roasties.  That sack used to stay in the Garage for a week or so and not a single potato was wasted.

In comparison, buy a 1KG bag of spuds from the likes of Tesco, leave them in their plastic coffin and watch them rot overnight.
