Looking to replace handbrake shoes when i do rear discs , when sellers say "TEVES SYS" what does it mean?

Different makes of braking systems TEVES (ATE), Girling, Bosch etc. So they know what you have fitted.

I thought it was about time for a stupid question!
On an automatic, why do handbrake cables ever need adjusting and hndbrake shoes wear out?
I do use the handbrake, but only gently after putting the gearbox into Park, but from time to time I run out of "clicks".
During my last service, Serek adjusted the rear brake shoes for me - what a difference!

As said they are all the same. But don't get confused in thinking the system is Mintex because they list them. Say you have a Girling or ATE system there is a multitude of manufacturers will do linings to fit.

Omega handbrakes are ALL the same ;)
And non of them is working properly anymore ;D ;D

If you mean 'pads' they won't get damaged. Knock pins out, remove pads, unbolt caliper (not fluid line), wind back the handbrake adjuster (through large hole front of disk), remove disk.
If you mean damaging the 'handbrake shoes' they won't get damaged. Do same as above.
