Everyone has thier own method, with milk and butter etc, even choice of potatoes. But after talking to someone today who was horrified I had never heard of Champ Mash (Me age 56 and her a mere 22) I am now looking for to trying some. :y
Method (From Google)
Boil the potatoes in salted water until soft. Drain and remove from the pan. Leave until just cool enough to peel. Mash thoroughly.
Boil the milk and add to the potato, together with the spring onions.
Season and stir well.
Pile into a serving dish.
Make a well in the centre and add the butter. Serve immediately. :P

I've done a few different methods. Usually whichever one catches my eye when I look at google moments before starting to make it. :y
None of them however begin with a packet and some boiling water. ::)

For better or worse I am practically allergic to the stuff, so can't help... ::)

Champ is mash and Scallions mixed together. English people often mistake spring onions for Scallions. :y :P ;D

I honestly don't know if there is a difference. I do know that when my Mum made champ she used the green leafy stem part of the scallions, chopped up and then mixed in with the mash. I also know it tasted disgusting and I always refused to eat it. ;D
In Ireland (or Norn Irn at least) if someone is a bit dim they are called "as thick as champ. :)

Lightly cooked scrambled Eggs folded into Creamed Mash toped with fried Mushrooms in Garlic Butter Sauce.
Mashed Swede mixed with Mash, plenty of Pepper.
Chopped Broccoli and chopped crispy Bacon mixed with Mash with a dash of HP Sauce.

Peel some tatties. Cut into chunks, chuck into boiling lighty salted water, boil for a few minutes NOT till soft.
Peel some parsnips. Tatties/parsnips 50/50. Cut into chunks. Chuck 'em in with the tatties. and cook the hell out of them.
Drain the lot. Big nob of butter. Mash. Maybe a touch of milk or cream if it looks a bit dry.
Options: One small clove of garlic finely chopped or crushed before mashing
Options: Some very finely chopped (Spring onion, scallion, shallot or whatever takes your fancy) but not too much before mashing and before milk or cream.
Do not use garlic AND whatever onion, it's too much. One or the other not both.
Then . . . . if you really want to do the biz, press it into a small baking dish, rough top surface, brush with melted butter, and grill till browned. With or without some grated cheese, maybe parmesan, up to you.
Next . . . . call an ambulance for your heart attack ::)

Its always a pink job. When it HAS to be blue, Smash. That's awful enough to ensure it always stays a pink job.
If no pink facilities available, then chips.
