Title: changing brake pads

when pushing back the piston, is it advisable to undo the bleed nipple in order to prevent brake fluid going up or would this not be a problem on the Omega?

Yep. Will prevent inverting the master cylinder seals :y

Best practice is to clamp the hose and then open the bleed nipple to expend the fluid when the piston is pushed back.   Same when renewing the brake fluid every 2 years.....    :o
