Can someone please tell me what are the advantages and disadvantages of removing the EGR and SAI? :y

The SAI is to allow the cats to warm to temperature quicker and thus reduce emmissions in order for the engine to meet design requirements way back when... The pumps can regularly become noisy in use and the simple fix is to simply unplug. No loss in engine efficiency thats noticable.
The EGR is regularly blanked off when problems manifest. Its use is again emmissions based so that the mixture at cruising speeds is leaned out and thus again helping consumption figures. Neither has any significant effect on engine output.

SAI - no
EGR - yes You could blank the EGR off though with no problems or EML :y

Ok so what do I unplug to disconnect SAI?
I assume this (yellow arrow on photo) but what else? Photo "borrowed" from elsewhere on OOF and isn't my car!

Also I notice some pictures of engines on here with no IACV. Is this facelift cars only or is there a way to remove the need for IACV.
I only ask as mine is showing a fault code that I can't get rid of despite replacing the IACV.

Those are 2.6 or 3.2 with drive by wire throttle

So can someone tell me what I need to unplug on the SAI and if there is a blanking plate for the EGR? :y

You make your own blanking plate with a piece of tin. :y

The SAI connector is under the nearside front wing, near the bumper, as I recall....

Is it just the one connector then? Can I then remove all the pipe work and block off the two pipes that go into the block? :-/

Look under the passenger wing, ahead of the wheel, under the headlight. The sai pump lives here and cable can be unplugged.
All the sai pipework can be removed, just blank off the feeds to the exhaust manifolds at the rubber connectors with a bit of 1/2" bar or a 15mm pipe and stop-end.
The solenoid you pointed to must remain in circuit though (plugged in) or else you get a fault code.
