How big a job/cost is doing a clutch on a manual V6?
Is a noisy release bearing a sign of impending clutch failure?

Not always mate - had noisy release bearings go on being noisy for ages with no other clutch issues

but while the box is out you would put a new one in. :)
(if its really bad it can break up and stop you going anywhere)

Agreed if changing clutch it makes sense to put a new release bearing in. Wouldn't take a box out if you can live with a noisy bearing assuming clutch otherwise ok.

Agreed .... but that wasn't the question ;)

there was a cost issue in the question, fitting a bearing on its own would be false economy. in pricing the job a full clutch kit and bearing should be incuded in the costing of the job.
