Can't see a ""how to" in the general maintenance section ( possibly because its such an easy job there's no need?) .. Anyway.. Is it as simple as it looks seeing as I can trace the the full length of the cable? Or is there a few things I news to know?

Nope... Non of them.. Ive replaced the spring on the slam panel today ... Adjusted the cable a couple of mm but still needs someone pushing down on bonnet while I pull lever to pop it.. I have new cable and it's the fitting of that I'm looking for not just the adjustment of it.

Has the Bonnet Spindle / Spring come loose or needs adjusting?

Well if everything is in place and fitted correctly, its normally down to too much slack in the cable.  :-\
