The ignition barrel runs a lot more stuff and fuses, than that one solenoid. (so probably has to be 80A to be able to cope with all that's running of it.)
The 80A fuse is not even there on early models (with the rest of the fuses in the engine bay)

The fuse is sized to protect the wiring to the starter switch, not necessarily the load on it. Yes, the switch powers many more loads than just the starter solenoid, so its' rating, and that of the wiring it protects will reflect that.

I wouldn't be surprised if the starter solenoid takes 20 or 30 Amps, mind.

Oil isn't conductive, but a persistent leak might have broken down insulating material used in the solenoid or the cables connecting it.
