Normal tires 215-55-16 (new)
winter tires 195*65-15

Not sure i'd be going any skinnier  :-? As for the technical implications, i'm not positive. But the omega is a big car and rides better and is safer with bigger wheels & tyres. I think the grip and comfort you would attain from moving to larger 16" wheels would be much more preferable.

There's a couple of firms doing 25% off/3 for 4 when you buy a set of tyres atm. Michelins, Pirelli's etc.

i've got 225-55-16's on mine!!!! 2.0l cdx. 1999 <don't know whether facelift or what, bit thick like that>

as long as you have them fitted in axle pairs there should be no problems if your running two different sizes just put the largest to the rears.

205/65-15 with winter tyres (original wheels)
235/45-17 with summer tyres (aftermarket)

Upgrading to the low-profile tyres definately improved the handling and firmed things up. Got rid of the wallowing feeling. Recommended. Just not so great in the snow (challenging to drive!), not that we get much here, which is why I keep my old ones for the winter.
