A good indication that the thermostat is stuck open is if you feel the temp of the large hose to the top of your radiator. It should get warm in one go ie as the 'stat opens, but if it slowly warms up as the engine warms up, then it's likely the 'stat needs changing.

As a general rule, if I get into my car and drive it from a cold start, after a mile the temperature gauge is off the minimum and it's fully warmed up in another mile or two.
My thermostat failed recently and, while there was no sign of coolant flow from cold, it used to run well under the "mid-gauge" point unless in traffic.
On a 2.6 dash, I would regard 85-90 indicated on the gauge as the normal range of temperatures if the thermostat is OK. Mine was previously showing 75-80 unless in traffic.
The job is actually not as bad as it seems, IMHO. There's a bit of stripping down to get to the thermostat but it wasn't as bad a job as I expected to just change it. The key is to follow the guide (and watch the videos if you can stomach some seriously bad music and heavy breathing).
