I'm looking at blocking off the big pipes and feed the pipe to a catch tank instead, and then I'm wondering what the small pipes on the inlet breather box are for?
Is one for vacuum and the other for oil?
What is the reason for one big and one small oil pipe from the same place?

They apply vacuum from the inlet to the crank cases . Obviously this wont happen if disconnected, and there's a risk of blowing various seals around the engine.

The two pipes take vacuum from before and after the throttle, presumably to cope with extra blow by gases in the crank case above and below tick over.
