Make and receive voice calls - obviously.
Good volume - I'm a bit deaf. 
Easy to use - I'm a bit slow with my fingers.
Sensitive to signal in poor reception areas.
Good battery life.

Camera & photo messaging useful - but need a big memory.
Organiser useful.
Able to host a Sudoku game - very useful, but hard on the battery.

Love my Sony Ericsson K800i :), but it won't last forever :(
