That amount of loss is not normal, is there coolant leaking at the rear of the engine?

Heater bypass valve is a likely culprit.

Mayonnaise in filler may well be normal, short journeys?

can also loose from the gasket around the oil cooler area..Also heater matrix or thermostat hose are the other areas..

if from heater matrix when you turn on the heater it will smell coolant..

Are you losing a small amoutn of oil too ? I had the same recently , going from header full to low coolant warning over about 2000 miles. I was also losing a small amount of oil, going from max to min over the same period. No mayo or oil in coolant but it turned out to be a leaking oil cooler.

The 'Mayo' on the inside of the oil filler cap can be down alot of stop starting like already said and to crap oil!! My car had mayo also when i first has it, wiped it of the inside of the cap then put new vauxhall semi synthetic in, not had a 'Mayo' problem since..

As for your Coolant can you not see any leaks anywhere under the bonnet?  What about on the floor under the car?
