According to the company, which I bought my wishbones from, I need to torque up the bolts with the suspension loaded, a number of ?'s spring to mind :-
  1) Does this include the ball-joint pinch bolt ?
  2) My Haynes manual decrees that you torque the wishbone bolts to 120Nm then angle tighten 30 degrees then angle tighten a further 15 degrees - could I tighten the bolts to 120Nm with wheels off (i.e. suspension NOT loaded) take it for a quick spin to settle the suspension then angle tighten with the suspension loaded.

1) no, must be tightened first of the joint will collapse with the weight.

2) No again. They have to be tightened with load. Nip them up finger tight and settle them on your driveway. 6 foot back and forward should do it then torque them up

It's the bolts through the front bushes on the wishbones that need load on the suspension to ensure the bushes don't twist. All others can be torqued in any state.

As said, as soon as you put any torque worth talking about on them, it will clamp the bushes in position and they will twist when the suspension is loaded up. Leave the bolts completely loose until the suspension is loaded up.

You can, of course, just nip the bolts up tight enough to clamp the bushes with the car on the ground, and then raise them to get more room for the final angle tightening.
