A friend of mine says you can leave the bastard bolt out and just not put the engine hoist back on, is that true?

A brave (read foolish) thing to do.

Once the water transfer pipe has corroded into the thermostat housing it might work but a new one will get pushed out by the pressure in the cooling system (unless the dip stick stops it).

No, it holds the dipstick tube, pipe from the thermostat housing and the engine hoist eye.

Thanks for the advice, I did the thermostat today and left the b bolt out. I'll put it back on in the morning. Is the hoist the first to go on? Cant remember the order.

Yes. It has a finger that engages with a hole cast in the cylinder head. You have to get that in first (with the lifting eye horizontal) and then rotate it to slide it up behind the transfer tube bracket.
