I think it was invented in India by the British Army to disguise poor quality or rotting meat.  :-\

This is very strange. I was speaking to one of my colleagues from the subcontinent about curries, having had a mindbendingly good lamb pathia. He called me a few names, said "giving them different titles is a Western thing, we just eat a curry made with whatever we fancy, and call it curry".

That's not news... Been going on since the dawn of time. Salt only lasts so long. And tastes rank in large quantities.

Adding spice to create subtle changes in flavour for gourmet purposes is a bit different.

That is the reason, but it predates the British Army by several centuries.
