Don't worry because generally speaking it's not that simple to downgrade now ;)

It used to be possible to - using special software - keep the old SHSH blobs (basically the security signing keys) for the old versions and then, if you wanted to downgrade, you'd install the old version of the OS while tricking iTunes into looking at the locally cached blobs rather than going to Apple for signing..  essentially that doesn't work anymore so if you upgrade, you've upgraded, you're stuck..

Admittedly a few months ago, but I did go 7 > 6 > 7 - so it does work, or at least did  :y

Downgrading newer devices from iOS6 and later is far from straightforward, due to the way the firmware signing changed.  Older devices are slightly more straightforward.
