A google for a solution to the pealing rubberised finish on facelift interiors reveals...

Plasti dip. Comes in a can to dip stuff in, bit like the rubber handles on pliers and side cutters etc. and, more importantly, in an aerosol for spray on purposes.
 There's mention of use for insulation of electrical connections, wrapping cars, wheels and stuff.

Various basic colours available.

Anyone used it?

Don't do grey so no correct colour match. I guess you could mix your own shade. I guess you'd have to rub back all the old soft touch finish before applying.

Sand the other stuff off, it's not essential but it will make a better finish. You'll have to apply about 3-4 coats and then it's quite durable stuff. To be honest I used it inside a Lexus that I was getting shot of, it looked good and felt like a factory finish.

Was thinking of the door "handle" and surround on the door card mainly. Might look odd with the window switches a different colour/shade because as you say, it's not going to be possible to mask out the symbols to allow the light to shine through on the window buttons.

...although I wonder how they achieved that at the factory?

When I bought a new rear blind switch I was asked which colour I wanted. Apparently the Vectra C is a slightly different shade.

Just remove the plastic finish.
I recently fitted gloss trims to my door cards  and when they were off I noticed how bad the soft touch finish around the window switches was.
Carefully flat back with 1200 and then 1500 wet and dry and you'll find that the substrate is exactly the same colour as the top finish. Look perfect again.
Re the actual switches , I had some plastic paint that I had got to try and refinish some mirror backs  a couple of coats with an artists brush gave an excellent finish.
I'll post a photo later , just off out now........
