How critical is it if I find the electrical hook-up on site has reverse polarity?

Unless your distribution box in the caravan has a double pole isolator, if you don't & have a breaker trip, then you're only isolating the neutral & not the live. It only takes a few minutes to  rewire your mains lead if it's arse about face. Before you do so though, try another socket ..... that might be the correct way round.

Aren't the hook-ups normally shucko plugs in France? Which can be plugged-in either way round anyway.

If you have a double pole RCD in the van electrics I wouldn't worry about it too much, TBH.

Even the French are waking up to the advantages of the proper UK style 3 pin plug & socket.

they don't tend to be unless the caravan is very new.
