...I have a full NOS system waiting to go on one of the Mercs... but with no bolts. Any recommendations for size and type to go for? Should I just ring Merc, or is Ebay the better place?

Ring Merc, and find out how much they will charge, and what the sizes are(M8 is likely).
Put that amount of cash to one side.
Check your Yellow Pages for an industrial fastener supplier.
Take your cash, and buy a supply of bolts, washers, nuts and nyloc nuts.
Spend the change on lunch.
I keep M5, M6 and M8 bolts of different lengths etc in stock, and buy a 100 at a time; £10 buys a good selection, especially in the smaller sizes. The real key to this is to know what you want and to ask for it by name(100 off M8x25 bolts with nuts and washers for instance)
I would only use stainless for trivial applications where appearance might matter, Bright Zinc Plate(BZP) is plenty good enough for most car jobs.
The firm I use supplied enough manifold studs(M8x40), copper nuts
and the downpipe nuts to leave some spares as well as do both heads, for under a fiver.
