Don't like the chopper style :P :P :P
My last bike was a Honda CB750 Nighthawk, basically a retro CB750, I put a screen on it and a couple of spots, American style. Lovely bike, wish I still had it :'(

Probably a 120/70-17 on the front and 180 or 190/55-17 on the rear. Pretty much standard sports bike fitment (R1, Blade, Gixers etc).
An off-road jobbie would have a 19" or 21" on the front, except for a Super-Moto which would look like an off-roader but with sports bike wheels and tyres (usually a 160/60-17 on the rear).
