Welcome aboard Ben. I've heard 2.5's are more prone to leaking cam covers than 3.0's though not sure. 2.5 manuals are pretty quick & not bad on fuel. 3.0's are quicker (obviously) especially mid range grunt.
  Dunno much about 3.2's but they're all auto unless you but an ex plod or MOD which will have a lower spec & often a high mileage.
    They're all good if you keep up oil & cambelt changes. :y

I think 2.5 is well matched with the car esp in manual form.
3.0L and 3.2 certainly feel quicker but are certainly thirstier.  Auto's are much thirstier than manuals.  Manuals are generally bomb proof.
But they are all basically the same engine with slightly different characteristics so you pay your money and take your choice. Good luck :)
