Is there any advantage to...

... fitting 3.0 throttle bodies to a 2.5?

... fitting 3.0 injectors to a 2.5?

If so, what are the gains?

Don't think the 3.0 throttle bodies are any bigger, but don't quote me.

Fitting bigger injectors (assuming they are actually different, I don't know) will only mess up your fuelling, requiring a remap. There's no advantage unless you're approaching the limit of the current injectors, which is pretty unlikely without forced induction.
