Does engine have to come out to change n/side exhaust manifold/gasket on a 3.0

Nope, it can be done in situ......one trick to make it easier is to remove the drivers side engine mount and disconnect one half of the passenger side. This allows the engine to be shifted over (whilst supporting it) to get better access  :y

Its actually quicker to do than the drivers!
