I noticed last Winter when the temperature was below -5, the idle speed on my 3.0 V6 would drop from 600 to 500 and start to have a rough feel. The Temp was -8 on my way to work today and after about 30-40 mins of driving the idle speed went down. Hopefully days when the temp is less than minus -5 should be few and far between, but does anyone know if this is to be expected or is there a possible fault in my car?

theoritically very cold weather means more air ..in this scenario ECU must correct the air fuel ratio with more fuel resulting the revs to go normal or high..so not normal..try unplugging MAF ..and check whats happening..

Idle speed was fine for the first few miles of driving. The problem only seemed to occur after say 20 miles. It did it on the way home too when I saw -9

Back to the original problem - mine started hunting a bit tonight, but only after a minute of being stationary.  My fuel consumption has gone to pot the last few days with the weather though - 160 miles and it's sitting on the 40 litre mark - it's usually much nearer 200 miles..
