Temp still high after replacing the thermostat

Hi all well i replaced the thermostat last weekend as my old one had it. Since then the temp has been much better but still goes alittle tad high then noral and when in traffi it goes up to 100 then drops right back down to just over 90 can anyone tell me why its like this

when it hits 100 the fans come on to bring temp back down sounds normal to me  :y
