Wow this is complicated - not like the old blaupunkt in my W124 estate.

If I wanted just a standard factory fitted stereo that worked with a screen and would enable me to use the functions of the screen what model with screen should I be looking for and would I need the stalk too?

ncdr2013 with a GID, but already paired together

If you talking about a GID Display the language is set via the original Head Unit, NCDC range, as pointed out these are not Consumer swappable, as a security feature they are paired together  (programmed to each other).

They do come up for sale now and then (NCDC plus GID, if thats what you did have) as taken out together from the donor Car, but without putting another spanner in the works, yours being an Elite would have been a Bose Sound version, so with an after market HU fitted have they tinkered with the rest of the original Bose Installation ie Amps, Wiring, Speakers and Sub Box?

If your happy with the noise your current stereo makes probably easier to convert your GID to a MID with some wiring changes and fit the Stalk IMHO.
